High-Protein Tzatziki Dressing
A pourable tzatziki — cool, garlicky and bright with lemon, blended completely smooth with fresh cucumber and dill, finished with whisked-in yogurt. Creamy without being heavy, with a clean tang and a raw-garlic edge that stands up to bitter greens. Clings to salads and grain bowls like a proper sauce.

Ingredients
- full-fat cottage cheese
- full-fat Greek yogurt
- English cucumber, rough-chopped
- garlic cloves
- lemon juice
- fresh dill, chopped
- fine sea salt
- black pepper
- Cold water, to thin (optional)
Instructions

Blend the cottage cheese, cucumber, garlic, dill and lemon juice until completely smooth, 60-90 seconds.

Whisk in the yogurt. Season with the salt and pepper.

Thin with cold water if needed, 15ml at a time, until pourable.

Chill for 30 minutes before serving.
Notes
Cucumber goes in raw and unsqueezed — its water thins the dressing and carries the flavour. Blend the base completely smooth before the yogurt goes in — whisking rather than blending the yogurt keeps its body. It tightens slightly in the fridge, so stop a touch looser than target — shake before pouring. Keeps 4 days. Makes about 350ml.
